Types of Tea
Black
The process of making the most popular tea involves withering, rolling, oxidizing and drying the leaves. Black Teas produce a strong full infusion with an amber coloured dark rich red liquor.
Green
When the fresh tea leaves are plucked, they are not fermented like the Black Teas or the semi-fermented oolongs. The leaves are steamed or pan-fried, rolled and then dried. The leaves retain great medicinal qualities.
White
This is the rarest of the teas we offer. They are also the least processed. White tea is not oxidized or rolled. They are withered by steaming and then dried. Harvested on only a few days in the year, White Teas of all the teas are known for there medicinal properties.
Semi-fermented Oolong
These half fermented teas are withered, partially oxidized and dried. They are somewhere between Black Teas and Green Teas and our Oolong Teas are a fine example.
